What are Dutch ovens?

This heavy, tight-lidded pot was invented by an Englishman in the 17th century based on the Dutch’s cast metal processes. The first characteristic you should look for is the material composition. Cast irons are common though the use of other metals is not unheard of. Although those from anodized aluminum and stainless steel are lighter in weight (and are therefore easier to handle), the cast iron made is still proven to be the best quality.

Porcelain-enameled cast iron is more convenient to clean than a plain cast iron, although porcelain is prone to cracking and expose the unseasoned cast iron within.

On the other hand, plain cast iron is generally more inexpensive than the porcelain-enameled ones. It is also known to last a very long time given that it is seasoned well and at regular intervals. Unseasoned or improperly seasoned cast irons are hard to clean and are known to react with acidic ingredients, like tomatoes.
